Spicy Tomato & Boursin Soup

Method

   Pop the Boursin right in the centre of your slow cooker. Add in the fresh tomatoes, cherry tomatoes, chopped red pepper and red onions all around it.

   Season with a pinch of salt and black pepper, then pour over the vegetable stock.

   Pop the lid on and let it cook on high for 3–4 hours or low for 6–7 hours, until everything’s lovely and soft and the Boursin has melted right in.

   Give it all a good blend until smooth (straight in the pot if you’ve got a hand blender, or transfer to a food processor.)

   Serve it up with a swirl of cream and maybe a drizzle of balsamic if you’re feeling fancy.
