Tunacado Pitta

Ingredients

  • 2 pitta breads
  • 120g tinned tuna, drained
  • 60g avocado
  • 2 tsp jalapeños
  • 20g red onion, diced
  • 2 tsp sriracha
  • 2 handfuls of rocket
  • 2 tbsp light mayonnaise
  • 2 tbsp reduced fat green pesto
  • 2 tomatoes, sliced

Method

  1. Mix tuna with jalapeños, red onion, sriracha, mayonnaise, and pesto
  2. Put half the mixture in an airtight container for tomorrow
  3. Toast one pitta bread lightly
  4. Slice pitta in half and fill with tuna, sliced tomato, half the rocket, and avocado
  5. Repeat with second pitta and remaining mix the next day
  6. Enjoy!
