Rich Beef Chilli
Ingredients
- 750g 5% fat beef mince
- 1 beef stock pot
- 1 red pepper, diced
- 1 onion, diced
- 4 tins chopped tomatoes
- 1 tin kidney beans
- 125ml red wine
- 2 squares of dark chocolate (or 1/2 tsp of sugar if you don't have any)
- 1 heaped tsp of garlic puree/lazy garlic
- 1 tsp cayenne pepper
- 2 tsp cumin
- 2 tsp cajun seasoning
- 2 tsp smoked paprika
- 1/2 tsp chilli flakes
- 1 tbsp balsamic vinegar
- 1 tbsp tomato puree
Method
- Start by frying the mince along with the beef stock pot until browned (no oil needed)
- Add the veg and fry together for 2 minutes
- Add the garlic and the spices, stir together
- Add the red wine and the balsamic, stir then add the tomatoes. Season with 1/2 tsp cracked black pepper and 1/4 tsp salt
- Quarter-fill the 2 empty tomato tins with water, swirl around, add that to the pan, then add the sugar
- Stir together, add in the tomato puree, cover loosely with foil, and let it simmer on low for at least one hour, stirring occasionally
- After 1 hour, add the drained tin of kidney beans and cook together for another 10 minutes
- Stir in the dark chocolate a few minutes before it's ready
