BBQ Pulled Chicken
Ingredients
- 1 chicken breast
- 50g BBQ sauce
- 30ml water
- 1 small knob of butter
Method
- Butterfly the chicken breast and cut in half lengthways so its in two pieces
- Season the chicken with salt and pepper
- Pan fry the chicken in a little butter or spray oil, until golden on both sides
- Mix the BBQ sauce and water together, then pour this over the chicken
- Put a lid on the pan and cook for about 10 minutes, until the chicken is cooked through
- Take the chicken out the pan and pull apart with two forks
- Return the chicken pieces to the pan and stir through the sauce to coat it
- Enjoy wrapped with some mozzarella! These are also great on brioche buns with my homemade coleslaw and corn on the cob!
