BBQ Pulled Chicken

Ingredients

  • 1 chicken breast
  • 50g BBQ sauce
  • 30ml water
  • 1 small knob of butter

Method

  1. Butterfly the chicken breast and cut in half lengthways so its in two pieces
  2. Season the chicken with salt and pepper
  3. Pan fry the chicken in a little butter or spray oil, until golden on both sides
  4. Mix the BBQ sauce and water together, then pour this over the chicken
  5. Put a lid on the pan and cook for about 10 minutes, until the chicken is cooked through
  6. Take the chicken out the pan and pull apart with two forks
  7. Return the chicken pieces to the pan and stir through the sauce to coat it
  8. Enjoy wrapped with some mozzarella! These are also great on brioche buns with my homemade coleslaw and corn on the cob!
