Pulled Cajun Chicken Pasta

Ingredients

  • 3 chicken breasts
  • 20g cajun seasoning
  • 1 red onion, diced
  • 100g frozen mixed peppers
  • 1 tsp tomato purée
  • 1 tsp garlic purée
  • 350ml chicken stock
  • 100ml crème fraîche
  • 250g dried pasta
  • 300ml milk
  • 100ml water
  • 50g grated mozzarella

Method

  1. Put the chicken breasts in the bowl of a slow cooker and season with salt and pepper
  2. Add the cajun seasoning, paprika, onion, peppers, tomato and garlic purée, chicken stock and crème fraîche in the slow cooker and give everything a stir
  3. Cook on high for 4 hours
  4. Shred the chicken up with a spoon or fork, then add the pasta, milk and water
  5. Stir everything together and cook for another 20 minutes, until the pasta is cooked
  6. Add the grated mozzarella on top and put the lid back on for a few minutes to let it melt, and serve
