Prawn & Chorizo Skewers

Ingredients

  • 170g uncooked prawns
  • 100g chorizo, sliced into around 18 pieces
  • 1 packet of microwavable rice (I used Mexican flavour)
  • 1/2 green pepper, cut into chunks
  • 1/2 red pepper, cut into chunks
  • 8 cherry tomatoes
  • 1 tsp smoked paprika
  • 1/2 tsp garlic granules
  • 1/2 tsp oregano
  • Bag of mixed salad
  • 2 tbsp honey
  • Pinch of chilli flakes.

Method

  1. Toss the prawns with the smoked paprika, garlic, oregano and some spray oil
  2. Add the prawns, chorizo, tomatoes and peppers to some skewers
  3. Cook in the air fryer 180°C for 6-8 minutes (depending on how big your prawns are) turning over half way
  4. Meanwhile, add the honey and chilli flakes to a bowl, mix and microwave for 1 minute
  5. Mix again and leave to infuse whilst you cook the rice following the packet instructions
  6. Serve the skewers with the rice and mixed salad, drizzle with the hot honey and enjoy!
