Prawn & Chorizo Skewers
Ingredients
- 170g uncooked prawns
- 100g chorizo, sliced into around 18 pieces
- 1 packet of microwavable rice (I used Mexican flavour)
- 1/2 green pepper, cut into chunks
- 1/2 red pepper, cut into chunks
- 8 cherry tomatoes
- 1 tsp smoked paprika
- 1/2 tsp garlic granules
- 1/2 tsp oregano
- Bag of mixed salad
- 2 tbsp honey
- Pinch of chilli flakes.
Method
- Toss the prawns with the smoked paprika, garlic, oregano and some spray oil
- Add the prawns, chorizo, tomatoes and peppers to some skewers
- Cook in the air fryer 180°C for 6-8 minutes (depending on how big your prawns are) turning over half way
- Meanwhile, add the honey and chilli flakes to a bowl, mix and microwave for 1 minute
- Mix again and leave to infuse whilst you cook the rice following the packet instructions
- Serve the skewers with the rice and mixed salad, drizzle with the hot honey and enjoy!
