Pollo Pesto Pasta

Ingredients

  • 160g dried penne
  • 2 medium chicken breasts
  • 1 small sliced red onion
  • 100g sliced mushrooms
  • 45g grated parmesan
  • 60g grated mozzarella
  • 125ml semi skimmed milk
  • 1 tbsp of reduced fat creme fraiche
  • Half a tsp of lazy garlic
  • 1 tbsp of green pesto

Method

  1. Season and grill the two chicken breasts under the grill on a medium heat, turning half way
  2. Once cooked, set aside and slice up
  3. Meanwhile - boil the pasta - don't over cook it, leave al dente. Drain and set aside once ready. Fry/grill the pan and add the onions, mushrooms and garlic, add a splash of water to help it all cook
  4. Once the veg has softened, add the pesto, then the milk and stir. Add 3 quarters of the parmesan to the pan, stir and then add the creme fraiche
  5. Add your chicken up together for a few
  6. Now add the cooked chicken & the pasta to the pan and add half of the mozzarella
  7. Then you need to transfer some to oven proof dishes for grilling - add the rest of the parmesan & mozzarella on top
  8. Place under a medium grill for 5 minutes until you can see the top of the dish turning slightly golden and crispy in parts! Now transfer to two bowls and enjoy :)
