Ingredients
- 2 chicken breasts, butterflied
- 300g dried pasta (I used Caserecce)
- 1/2 red pepper, diced
- 1/4 red onion, diced
- 1 tbsp frozen cob
- 1 block halloumi
- 2 tbsp Nando's garlic marinade
- 1 tsp smoked paprika
- 4 tbsp Nando's perinaise
- 2 tbsp Nando's garlic peri peri sauce (or whichever you like)
- 2 tbsp light mayo
Method
- Cook the pasta in salted water following pack instructions, drain and set aside
- Marinate the chicken in the Nando's marinade (I used the hot one here, but you can marinate for longer if you like)
- add 1 tsp smoked paprika and a pinch of black pepper too, coat the chicken all over
- Add chicken to air fryer, spray with oil spray, cook on 180 for 4 minutes
- Now turn over chicken, add in the corn, cook everything together for another 10 minutes on 180 or until cooked through
- Remove the chicken and corn from air fryer and slice up
- Cube up the halloumi and coat in the perinaise
- Add halloumi to the air fryer with space between each piece, spray with oil
- Air fry the halloumi on 210 for 5-6 minutes or until golden - air fryer needs to be hot for halloumi or it just kind of melts!
- Add the pasta to a big bowl, add the chicken, corn, halloumi, red onion and red pepper, add the perinaise, mayo and Nando's sauce, mix well and enjoy!
