Nando'S Pasta Salad

Ingredients

  • 2 chicken breasts, butterflied
  • 300g dried pasta (I used Caserecce)
  • 1/2 red pepper, diced
  • 1/4 red onion, diced
  • 1 tbsp frozen cob
  • 1 block halloumi
  • 2 tbsp Nando's garlic marinade
  • 1 tsp smoked paprika
  • 4 tbsp Nando's perinaise
  • 2 tbsp Nando's garlic peri peri sauce (or whichever you like)
  • 2 tbsp light mayo

Method

  1. Cook the pasta in salted water following pack instructions, drain and set aside
  2. Marinate the chicken in the Nando's marinade (I used the hot one here, but you can marinate for longer if you like)
  3. add 1 tsp smoked paprika and a pinch of black pepper too, coat the chicken all over
  4. Add chicken to air fryer, spray with oil spray, cook on 180 for 4 minutes
  5. Now turn over chicken, add in the corn, cook everything together for another 10 minutes on 180 or until cooked through
  6. Remove the chicken and corn from air fryer and slice up
  7. Cube up the halloumi and coat in the perinaise
  8. Add halloumi to the air fryer with space between each piece, spray with oil
  9. Air fry the halloumi on 210 for 5-6 minutes or until golden - air fryer needs to be hot for halloumi or it just kind of melts!
  10. Add the pasta to a big bowl, add the chicken, corn, halloumi, red onion and red pepper, add the perinaise, mayo and Nando's sauce, mix well and enjoy!
