Garlic chilli chicken curry

  1. In a bowl mix the chicken breast, yoghurt, 1 tsp curry powder, 1 tsp garam masala, the garlic purée and chilli flakes. Leave the chicken to marinate for at least 30 minutes, or overnight
  2. When ready to cook, start by frying the garlic in a large pan with some oil until starting to go brown
  3. Add the onion and red chilli and cook together
  4. Add the rest of the curry powder and garam masala, as well as the paprika, coriander, ginger purée and tomato purée
  5. Now add the marinated chicken, stir well and cook everything together for a few minutes
  6. Crush the plum tomatoes up, by hand or however you like, and add to the pan along with some extra water from the tin (about 1/4 full), season with salt and pepper and add the sugar
  7. Simmer everything together until thickened (takes about 30 minutes) and serve with basmati rice and/or naan breads!
