Cheat'S Paella

Ingredients

  • 300g chicken breast, chopped into small chunks
  • 1/2 onion, diced
  • 1/2 red pepper, diced
  • 1 tbsp tomato purée
  • 1 tsp lazy garlic 50g frozen peas
  • 6 slices (30g) chorizo, sliced
  • 1/2 tsp smoked paprika Pinch of chilli flakes Pinch of dried parsley
  • 100g washed long grain rice
  • 1/2 chicken stockpot/cube mixed with
  • 400ml boiling water

Method

  1. Start by frying the onion and red pepper with a few sprays of oil in a large pan, then add the chicken, this only needs quickly sealing as it will cook through in the stock!
  2. Add the garlic, sliced chorizo, a pinch of salt and pepper, the frozen peas, the washed rice, tomato purée, pinch of chilli flakes and parsley, give it all a stir and then add the chicken stock
  3. Stir together and then add a lid or some foil and let it simmer away for about 20 minutes or until the rice is cooked, stirring now and then so it doesn't stick!
  4. Finish with a sprinkle of parsley, serve into bowls and enjoy!
